The grapes are sourced from a single south-facing block high in the interior valley slopes of the Durbanville Hills. Standing amongst these vines, you face the rolling swells and breaking surf of the Atlantic — the origin of the almost daily southwest wind. This regular afternoon on-shore breeze from the cold Atlantic shapes the wine’s distinctive, racy character.
Winemaking
Crafted in a reductive style to preserve maximum natural fruit flavours, Philippi Sauvignon Blanc is fermented for 7 days until fully dry, with long lees contact to preserve freshness. The lees are stirred monthly for 5 months before removal and bottling, resulting in a wine with rich mouthfeel and vibrant acidity.
