Grape Variety:  Sauvignon Blanc

 

The Cape’s Atlantic seaboard influence is highly sought-after for a specific style of Sauvignon Blanc; firm  in mouthfeel, rich and racy. The grapes for this wine were harvested in Durbanville, Cape Town.

The chief influence on the flavour and wine structure is the regular afternoon on-shore summer breeze originating over the very cold Atlantic. The velocity of this wind is seldom more than 15 kph.

 

Vineyard Location

The grapes are from a single block in a rare south-facing location high on the slopes of an interior valley in the Durbanville Hills. Standing in the vineyard, one faces directly out over the rolling swells and breaking surf of the Atlantic, the origin of the almost daily southwest wind.

The Winemaking

This wine has been made in a reductive style that preserves the maximum of the natural fruit flavours. It was fermented for 7 days until totally dry. It has had little oxygen influence, with long lees contact preserving its freshness. The lees were stirred up into the wine regularly once a month for 5 months, before removal and bottling.
